About the ramblings in the beginning, nukazuke pickles are vegetables put in pickle presses with rice bran and left for months to ferment and narazuke are fermented with yeast and such. People in Japan can make their own pickles because the products are available, but then again they also know how to do it right. I'll stick with cheater pickles :o
For this you'll need:
1/4 cup chopped carrots
1/4 cup chopped cucumber
1/4 cup chopped daikon
1 tsp salt
3/4 cup water
3 tbsp rice vinegar
1 tbsp sugar
1 tsp soy sauce
With vegetables cut into 2 inch strips, toss them with salt and set aside for 30 minutes. OSMOSIS. Combine remaining ingredients in a sealable container. Once vegetables are done, drain, rinse, and dry them before adding them to the liquids. Put in fridge to rest for at least four hours.
